Recipe: Momi’s ‘Opae (Shrimp)  Fajitas


Momi’s ‘Opae Fajitas

½ lb med. Shrimp or “Opae”

½ lg Onion of choice

1 red bell pepper

2 tbsp coconut oil

1 lg clove garlic, minced

½ tsp coarse sea salt

2 tsp cumin

1 tsp turmeric

½ tsp red chili pepper

8 oz. pineapple, crushed

4 tortillas of choice

Heat oil and sauté all but the shrimp and pineapple for 3 mins. On high, reduce to med. Add shrimp, stir for 2 mins or until pink and curly. Remove from heat, add pineapple. Heat tortillas on open flame. Serve with mango salsa, or diced tomato and avocado.
